Step out and step into SPRING!

Well, I stepped outside and decided that it was still a bit too miserable to be pushing around the garden with my camera! So, I shall rely on these images taken when the sun was shining!

How about a bright Sunflower to cheer us up on a miserable Spring day? Buy a bunch of brightly coloured flowers to cheer yourself up ......they say that yellow is a good colour to stimulate one's appetite...... ?







I love my wild winter garden.....bright Nasturtinum flowers keep my spirits high..... I cannot get enough of their bright, festive, summery colours.






aha.....SUNSHINE..... It will return to warm our souls......just believe it!
Back in the kitchen I get creative with a favourite bright yellow fruit, a simple lemon. Never under estimate the value of the lemon in sweet and savoury cookery. I have discovered that adding some grated lemon zest to savoury dishes just lifts and freshens the flavour.  

I recently created this delightful Garlic, Lemon and Rosemary Salt Rub. It is so convenient to have all these flavours packed into one little bottle...... and it works wonders too.  
Since it is Arbor Day today, why not go out and plant a Lemon Tree in your garden. You will be rewarded with juicy lemons for many years to come. 

While on the topic of Lemons...... I have to share another family secret with you.......Lemon Pudding!



Ingredients:

2 Lemons, Juice and rind.
2 Heaped Tablespoons Maizena
1 Cup Sugar
2 Eggs plus extra 2 egg whites.
2 Cups Boiling Water
2 Tablespoons Castor Sugar

Method:

Dissolve maizena in 1/4 cup cold water.
Add sugar, slightly beaten egg yolks, lemon juice and rind.
Add 2 cups boiling water and stir well.
Bring this mixture slowly to the boil, stirring all the time as it thickens. Remove from heat and cool.
Beat egg whites to stiff peak stage with castor sugar.
Gently add the lemon mixture to the beaten egg whites spoon by spoon. Stir using a metal spoon to incorporate all the egg whites evenly into the lemon mixture.
Place in a glass serving bowl. Allow to cool overnightt in the fridge.
Serve with lashings of cream..... the Jensen family way!!!

Combine the Lemon mixture and the beaten egg whites. 
Soft, foamy and full of  intense lemon flavour, the lemon pudding  is ready for the fridge. 

Lemon pudding ready.....Now serve and fight over who will lick the bowl at the end!!!!
